Eating from the Pantry Challenge: Day 2
One of my very favorite cooking websites is SouthernPlate.com. Christy's recipes are simple ones with ingredients that I always have in the pantry. (And you probably do too!) About a month ago I made her Super Easy Spaghetti Sauce & split it into three servings, using one and freezing the other two. I LOVE that I can cook once but have three meals ready to go!
Last night my hubs used the last batch from the freezer adding some extra hamburger to it that was cooked and ready to use in my freezer too. (I find he cooks more often if I make it an easy process.) He also used two almost empty boxes of spaghetti that were lying around in the cabinet. And after dinner we forced* ourselves to eat the last little bit of ice cream.
Super Easy Spaghetti Sauce (adapted from this recipe)
2 jars of spaghetti sauce
1 15oz can of diced tomatoes
1 15oz can of tomato sauce
1 1/2 Tbsp Italian seasoning
1 Tbsp sugar
1 1/2 lbs of ground beef, browned & drained
1 onion, chopped
1 green pepper, chopped
2 cloves of garlic, chopped
Mix everything together and simmer for a couple of hours on the stovetop *OR* all day in the crockpot.
I added the veggies & garlic to the original recipe because we like a chunkier sauce but you can leave those out if you don't. Don't be afraid to change recipes up a bit - substitute sausage for hamburger, use flavored tomatoes, or even tomato paste mixed with water if you don't have any sauce on hand. It's about using what you have so be creative!
*Forced in a good way. :)

That sauce sounds delicious! I use jarred and then add my own special touch! I love making extras so that I have some ready to go in my freezer too!
Tonight we are having chicken breast out of the freezer (on the grill again...but this time in several inches of snow!) along with some Knorr Rice and Noodle packets from the pantry. I might TRY and sneak in a bag of frozen broccoli to the mix also!
