Eating From The Pantry: Chocolate Chocolate Chip Cookies


I first made these cookies for my niece because whenever I ask her what kind of cookies she wants to make her response is ALWAYS "schocolate". She loves chocolate. I love chocolate. And this recipe gives us chocolate x 2.

Chocolate Chocolate Chip Cookies (adapted from this recipe)

1/2 cup butter, softened
1/2 cup shortening
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)

Preheat oven to 350 degrees.

Cream butter, shortening, white sugar and brown sugar together. Add eggs and vanilla; beat until light & fluffy. Mix flour, cocoa powder, baking soda and salt in a separate bowl. Stir the dry ingredients into the butter mixture until well combined. Add chocolate chips (and walnuts if using).Drop by teaspoonfuls onto an ungreased cookies sheet.

Bake 8-10 minutes. Do NOT over bake. You want these cookies nice and soft. Allow cookies to cool for slightly before transferring to a cooling rack.

Makes 4 dozen.
