Friday night we invited friends over for dinner so I was on the hunt for a simple dessert that would work within my Pantry Challenge. Plus one of the guests is using Weight Watchers and I knew the main course wasn't exactly WW friendly (chicken pot pie) so I wanted to find something that could be portioned easily.
Enter this Cheesecake Squares recipe that was actually advertised as a WW recipe. Now to be honest I didn't double check the nutritional value so I can't attest to any of it but it easy to portion & my friend only had one small square so I'm sure it wasn't too bad. And I had everything on hand except for M&M's.
Cheesecake Squares
(adapted from this recipe)
1/3 cup margarine
1/3 cup brown sugar, packed
1 cup flour
1/2 cup walnuts, chopped
8oz cream cheese, softened
1/4 cup sugar
1 egg
1 tsp vanilla
1/2 - 3/4 cup plain M&M's
Preheat oven to 350 degrees. Cream margarine & brown sugar together until light & fluffy. Mix in flour & walnuts. Reserve 1/2 cup of the mixture and press the remaining amount into an 8"x8" pan. Bake for 10 minutes. While the crust is baking, mix cream cheese and sugar. Add egg & vanilla and combine thoroughly. After the crust is finished spread 2/3 of the M&M's over the crust & then spread the cheesecake filling. Mix the remaining M&M's with the reserved topping mix & sprinkle over the top. Bake for 20 minutes. Allow to cool & refrigerate for at least 4 hours for best results.
